His culinary vision brings together two places that define his story: Chile, where he was born, and Mallorca, his home for over two decades. A new perspective on Mallorcan cuisine:
Jhonatan Maldonado's cooking is grounded in a deep respect for ingredients. He combines fresh fish sourced from local markets with ramallet tomatoes, almonds, aromatic herbs, and extra virgin olive oil, all of which are produced in Mallorca. He also incorporates flavours and techniques inspired by his Chilean heritage into his dishes.
For example, wild sea bass may be served with ramallet tomatoes, pisco sour sorbet and espuma. Glazed aubergine is balanced by Son Jover cheese, basil and Mallorcan almonds. Balearic bluefin tuna belly is enhanced with citrus notes, crunchy textures and subtle pickled elements.
The result is a fine dining experience in which the flavours of the sea and land, intensity and freshness, acidity and depth coexist in perfect harmony. Here, technique never overshadows the product — it reveals its full potential.
Küme: The happiness of eating well
Botànic is proud to introduce Küme, a new lunch concept whose name means 'happiness' in the Mapuche language.
Inspired by Mallorca's seasonal produce, the menu evolves according to the availability of local ingredients. It is a contemporary and dynamic option for those seeking a

Pewma: A dream turned into a tasting menu
As evening falls, Pewma takes centre stage. Meaning “dream” in Mapuche, it is Botànic's first tasting menu and the most personal expression of Chef Maldonado's culinary journey.
Through 12 courses, including appetisers, guests embark on a journey through the landscapes and memories that have shaped the chef. The Andes find their reflection in the Serra de Tramuntana, while the Pacific Ocean enters into dialogue with the Mediterranean Sea.
Red prawns, Balearic bluefin tuna, line-caught squid and lamb are reinterpreted through a unique perspective, allowing each ingredient to retain its identity while revealing unexpected dimensions.

This new chapter also welcomes Alejandro Palmer, who returns to Mallorca after several years working in some of Europe's most acclaimed kitchens, joining the Botànic team.
