Botànic: Come and experience new gastronomic delights in the heart of Palma!

Located in the historic old town of Palma, Botànic is the restaurant of Can Bordoy Grand House & Garden and is entering a new culinary chapter under the direction of chef Jhonatan Maldonado. Drawing on memories of his Chilean roots and the richness of Mallorca’s local produce, Jhonatan creates distinctive dishes that are defined by technical precision, respect for ingredients and a dialogue between the two regions.
Pewma: A culinary journey between Chile and Mallorca
The latest addition to the restaurant is the Pewma tasting menu. Deriving from the Mapuche language, the name encapsulates the essence of this twelve-course culinary odyssey, which includes the opening bites and brings the chef’s personal memories, landscapes, and influences to the table.
Throughout the menu, the Andes find their counterpart in the Serra de Tramuntana, while the Pacific Ocean engages in dialogue with the Mediterranean. Red prawn, Balearic bluefin tuna, line-caught squid and lamb take centre stage in a culinary experience where Latin American flavours meet Mediterranean traditions. Each dish explores contrasts, textures and subtle nuances, creating a distinctive fusion of the two culinary cultures.
The Pewma tasting menu is available during dinner service and can be enjoyed alongside the à la carte menu at Botànic. It is complemented by a selection of thoughtfully curated tableware and ceramics, crafted in collaboration with local artisans, including Pell Ceràmica and Valle Cerámica. The wine pairing, El Sueño Compartido ('The Shared Dream'), completes the culinary journey, offering a selection of wines designed to accompany the different courses.
Küme: The menu focuses on local produce from Mallorca
At lunchtime, Küme offers a fresh take on Jhonatan Maldonado’s cuisine. The name Küme means 'happiness' in Mapudungun, the language of the Mapuche people of Chile. This reflects the spirit of a gastronomic concept firmly grounded in local produce, Mallorca’s markets and seasonal ingredients.
The menu evolves with the seasons and the island’s produce, reflecting a style of cooking in which Mallorcan and Chilean cuisines are in constant dialogue. Examples include wild meagre paired with tomàtiga de ramellet tomatoes, pisco sour sorbet and foam; glazed aubergine served with Son Jover cheese, basil and Mallorcan almonds; and reimagined Balearic bluefin tuna belly with crisp textures, citrus notes and pickled elements.
These combinations demonstrate how locally sourced ingredients can be explored from new perspectives without losing their identity. Technique enhances each ingredient, expressing the chef’s personal vision through contemporary cuisine shaped by the fusion of two cultures.
