Born in Viña del Mar, Chile, and based in Mallorca for more than twenty years, Jhonatan Maldonado brings extensive experience from some of Spain's most acclaimed kitchens, including Zaranda, Coque and Park Hyatt. Throughout his career, he has developed a culinary philosophy rooted in technical excellence, respect for seasonal ingredients and an honest, product-driven approach to cooking.

His arrival at Can Bordoy introduces a fresh perspective to Palma's contemporary fine dining scene while building on the restaurant's already well-established reputation.
